PURPOSE
The Steward is in charge of keeping the dishwashing machine clean and free of food particles that may impede its successful operation. They keep the rinse agents and soaps at an acceptable level, deals with general garbage removal and the recycling of cardboard and cans. This position serves as an assistant to all culinary team members in the daily execution of their tasks.
PRIMARY DUTIES
- Must wash of all ceramics, equipment and stainless products supplied by wait and culinary staff.
- Responsible for assisting the 3rd cook with the daily preparation of raw product for service ie. Peeled potatoes, carrots, onions etc.
- Keep the dishwashing machine clean, which includes dismantling and scrubbing the complete interior on a per shift basis.
- Keep a backup of all cleaning chemicals and supplies used in this station ready, in case of need for replacement during shift.
- General garbage removal and recycling of card board and cans a minimum of once each shift. More often if required.
- Daily sweeping and mopping of service coolers and floors
- Prompt cleaning of any spills or leaks as requested by culinary team.
- Submit ideas for operational improvements to Executive Chef
- Keep walls above and below counters in dishwasher area clean.
- Ensure preparation sinks in main kitchen are clean and free of equipment and food waste at least 2 times per shift or when required by culinary team
- Clean all stainless counters and racks before end of evening shift. (More often if possible)
- Assist cooks in preparation where and when needed.
- Follow company policies & procedures as outlined in the Team Member Handbook, and is able to effectively communicate them to other team members
- Understand and work in accordance with health and safety mandates
