Mekong - Sous Chef

Location: Whistler, BC

Wage: $28.00/hr

Hours: 40 hours/week

Position: Full-Time, Permanent

About Us: Mekong Restaurant is an upscale Thai restaurant in Whistler, British Columbia, dedicated to showcasing

authentic Thai cuisine through traditional cooking techniques, premium local ingredients, and refined presentation.

Position Summary: Assisting the Executive Chef in leading all aspects of kitchen operations. Requires extensive

knowledge of authentic Thai cuisine, traditional techniques, wok cookery, curry production, salad preparation,

charcoal/grill cooking, and Thai herbs/spices.

Key Responsibilities:

• Assist Executive Chef in daily operations, scheduling, and staff development.

• Lead Wok Station (traditional stir-fry, heat control, seasoning).

• Prepare authentic curry pastes and sauces using traditional methods.

• Manage Salad Station (Som Tum, Larb, Yum) and Grill Station.

• Utilize authentic ingredients: galangal, lemongrass, kaffir lime, holy basil.

• Advanced knife skills, precision vegetable carving, and butchery.

• Train and mentor kitchen staff, ensure portion control and plating.

• Maintain food safety, inventory management, and WorkSafeBC compliance.

Required Qualifications:

• Minimum 1 year experience as Sous Chef or senior line cook.

• Extensive experience preparing authentic Thai cuisine in commercial kitchens.

• Expertise in Thai Wok, Curry, Salad, and Grill stations.

• Advanced knife skills, strong leadership, and team management.

• Food Safe Level 1 Certification (or willingness to obtain).

Preferred Qualifications: Formal culinary education; experience in upscale Asian restaurants; ability to train

multicultural teams.

Work Environment: Requires standing for extended periods, lifting up to 55 lbs, and working efficiently in a fast-paced

environment.
